You may have made a cinnamon roll french toast casserole or french toast bake, but those can take a long time to make. With the instant pot craze going on, we thought we would try to shorten the preparation time needed for traditional french toast bakes! We love our instant pot and use it for dinners all the time. We have even used it for dessert with our Instant Pot Monkey Bread. The ease and quickness of it are perfect for our busy lifestyle.
I honestly had no idea that you could even make french toast in the instant pot! But it is really easy! Feel free to add in some fun additions like pecans, walnuts or chocolate chips! They are all great.

Prepare the vegan custard mixture
In a medium bowl, whisk together oat/soy milk, coconut milk, maple syrup, vanilla, cinnamon, nutmeg, melted vegan butter, and the flaxseed + water mixture. Let the mixture rest for 5–7 minutes so it thickens slightly. This replaces the traditional egg-based custard. -
Prepare the bread
Cut the loaf into cubes (about 1–1.5 inches). Place them into your heat-safe bowl or casserole dish. -
Combine
Pour the vegan custard mixture over the bread. Use a spoon to gently press the bread down so it absorbs the liquid evenly. If adding nuts or vegan chocolate chips, fold them in now. -
Set up the Instant Pot
Pour 1 cup of water into the Instant Pot and place the trivet inside. Cover the filled baking dish tightly with foil to prevent moisture from dripping in. -
Cook
Lower the dish into the pot.
Set to Manual / High Pressure for 25 minutes, then allow a natural release for 10 minutes. -
Finish
Carefully remove the dish. For a slightly crisp top, place it under the oven broiler for 2–3 minutes (optional). -
Serve
Drizzle with extra maple syrup or top with fresh berries, chopped nuts, or a spoonful of dairy-free yogurt.
